Creamy carrot soup with toast

Youll need:

Soup

– 1 kilo of carrots
– 1 onion
– 1 clove of garlic
– About 5 cm fresh ginger
– 7 dl water
– 2 dl cream
– 2 vegetable
bouillon cubes – salt, lemon pepper and chilli flakes

Toast

– 8 slices of toast
– 8 slices of cheese
– 4 slices of ham
– Mustard

There are few things that warm body and soul better than soup and toast by the campfire. Did you know you can use our coffee pots for soup and our waffle iron to make grilled sandwiches? We love when things are versatile.

Instructions:

  • Peel the carrots and cut into small pieces. Chop onion, garlic and ginger.
  • Fry the onion, garlic and ginger in a little oil. When it starts to soften, add the carrots, water and stock cubes. Let this cook until the carrots are soft.
  • Blend the soup with a hand blender or similar. Then add the cream, salt, lemon pepper and chilli flakes. Mix once more.
  • (We chose to mix the soup at home in the kitchen before we set out, but if you want to make it right by the campfire, you can serve it chunky)
  • Then pour the soup directly into the coffee pot or into a thermos, depending on how far you have to go.
  • Heat the soup in the coffee pot over the open fire.
  • Heat the waffle iron by placing it on top of the fire or embers so that it is really hot before you start making your toasts. Then brush the iron with butter or oil.
  • The sandwiches are easy to make: Spread some mustard on each sandwich, then put a slice of cheese on each, put a piece of ham on one and put the two sandwiches together.
  • Then put your double sandwich in the waffle iron, bake until the cheese melts and the outside turns golden brown. Be careful, this can go fast.
  • Pour the soup into a bowl and serve with your waffle sandwiches.
